INGREDIENTS:

  • 8 ounces angel hair pasta, cooked according to package directions
  • ½ cup unsalted butter
  • 5 garlic cloves, finely minced
  • 1 pound large shrimp, peeled, de-veined, and cleaned with tails off
  • ½ teaspoon salt
  • ½ teaspoon fresh ground black pepper
  • ¼ cup lemon juice
  • 1 teaspoon lemon zest

DIRECTIONS:

Cook pasta according to package directions, drain, and set aside. Heat large skillet over medium-high, add butter, salt, pepper and minced garlic then cook for 30 seconds.  Add shrimp and cook each side for one minute each. Cooking time may vary based on size of shrimp; don’t overcook or shrimp will become rubbery and tough. Add lemon juice and zest, stir briefly to combine. Turn heat to low, add pasta to skillet, and toss to combine and coat. Taste, check for seasoning balance then serve immediately. Dish is best warm and fresh, but will keep airtight in the fridge for up to 3 days. Reheat gently prior to serving.
